Generating now with hatchling gives a pyproject with

requires-python = ">=3.8"

I suspect this is unexpected given the documentation in the README.

What are you using to generate? Copier uses the last release tag.

Yes, copier is using the last released version. We probably should release a new version. It's annoying that copier does this - you can use copier copy gh:scientific-python/cookie pyhs3 --trust --vcs-ref=HEAD to make it work like cookiecutter.
